Gratitude: Day 4 | Your Favorite Breakfast Food

When it comes to being grateful, it’s important to focus on the important things family, friends, a home, clothes, etc, etc. However, I feel it’s equally important to make note of the little things as well. So today’s post is all about pancakes.

One of the prompts I came across was to write about a breakfast food you love. While I (and many others) could talk at length about the love of bacon, I thought I would go slightly less conventional and focus on what is quite possibly my favorite food on the planet. I love pancakes.

My love of pancakes has been long-lived it goes back to my childhood. The best pancakes ever were made by my maternal grandmother. A couple of times a week she would make them for breakfast, and she would usually have one or two left over. She would put these in a sandwich baggy and leave them on the table. If this happened on a day when we happened to visit, the leftover pancakes were all mine. To this day I enjoy eating cold, leftover pancakes just as much, if not more, than piping hot, fresh ones.

I’m not a huge fan of syrup or other toppings on my pancakes. Syrup always seems to get everywhere no matter how careful I am to get in only on my food. It’s sticky, it’s messy, and I think it takes away from the yummy goodness of the pancakes themselves. I also lean towards the classic buttermilk over any of the fancier options. I good, fluffy buttermilk pancake is the quickest way to my heart.

I can, and have, eaten pancakes at all hours of the day. I’ve been known to make a full batch at 2 am just because I had a craving (clearly IHOP was on to something). Actually, I’m a huge fan of most breakfast foods at all hours of the day or night, but pancakes will always have a special place in my heart, and tummy.
